Beetroot Powder Recipes

These beetroot powder recipes use one rounded teaspoon (5 g) per serve, the same as the serve on our label, so a 250 g jar makes 50 of them.

Beetroot powder recipes for every day

Pink breakfast smoothie

Serves 1

  • 1 rounded tsp beetroot powder
  • 1 frozen banana
  • 1/2 cup frozen mixed berries
  • 1 cup milk of your choice
  • 1 tbsp rolled oats (optional)
  1. Add everything to a blender.
  2. Blend until smooth and deep pink.
  3. Rinse the jug straight away so it does not stain.

Beetroot latte

Serves 1

  • 1 rounded tsp beetroot powder
  • 1 cup milk of your choice
  • 1/4 tsp cinnamon
  • Honey or maple syrup to taste
  1. Warm the milk until steaming, without boiling.
  2. Whisk in the beetroot powder, cinnamon and sweetener until smooth.
  3. Froth with a milk frother if you have one.

Beetroot hummus

Serves 4

  • 1 x 400 g tin chickpeas, drained
  • 2 rounded tsp beetroot powder
  • 2 tbsp tahini
  • Juice of 1 lemon
  • 1 small garlic clove
  • 3 tbsp olive oil
  • Salt to taste
  1. Blend everything except the oil until smooth.
  2. With the motor running, drizzle in the oil.
  3. Loosen with a splash of cold water if needed.

Pink pancakes

Makes 8 small pancakes

  • 1 cup self-raising flour
  • 1 rounded tsp beetroot powder
  • 1 egg
  • 3/4 cup milk
  • Butter for the pan
  1. Whisk the flour and beetroot powder together.
  2. Beat in the egg and milk to a smooth batter.
  3. Cook spoonfuls over a low to medium heat until bubbles form, then flip.

Beetroot overnight oats

Serves 1

  • 1/2 cup rolled oats
  • 1 rounded tsp beetroot powder
  • 1/2 cup milk
  • 1/4 cup yoghurt
  • Berries to serve
  1. Stir the oats, beetroot powder, milk and yoghurt together in a jar.
  2. Refrigerate overnight.
  3. Top with berries in the morning.

Natural pink icing

Ices 12 cupcakes

  • 2 cups icing sugar
  • 1 to 2 tsp beetroot powder
  • 2 to 3 tbsp milk
  • Squeeze of lemon juice
  1. Sift the icing sugar and beetroot powder together.
  2. Add the lemon and milk a little at a time until smooth.
  3. Add more powder for a deeper pink.

Cooking with beetroot powder: heat and colour

The pink in beetroot comes from natural pigments that fade with long, high heat. That is why a beetroot cake often comes out brownish rather than bright. For the strongest colour, add the powder to things that are not cooked, such as smoothies, dips, icing and yoghurt, or stir it in at the end of cooking.

A little acid helps hold the colour, which is why the hummus and icing above use lemon juice. Start with a small amount: a teaspoon goes a long way, and the earthy flavour gets stronger as you add more.
